Slice bitter gourd thinly and soak in salt to reduce bitterness. Fry dried chilies, garlic, and onions in mustard oil, then add the bitter gourd. Once softened, mix in turmeric-seasoned shrimp. Cook for 5-7 minutes. Serve warm with steamed rice.
